Wild Santorini Capers & Caper Leaves
Capers are the immature buds plucked from the Juniper bush native to the Mediterranean region. Capers grow on Greek islands uncultivated by the sea. They are picked from September to June when humidity and rains allow the plant to produce tender buds and fruit.
As with many things, wild capers taste intriguingly better than cultivated ones. They are not sorted to size, but by collection place and time.
Fresh caper blossoms are not especially flavorful, but their sharpness increases dramatically after sun-drying and brining.
